Josh Thomas was born in the back streets of Bridgend, a little known third world area of Wales. Battling hardships throughout his childhood, he overcame his upbringing in such a troubled area to make a career in the bright lights of Cardiff. Training under renowned chefs such as Dan Rees, he has created and curated a city centre pop up restaurant and successfully managed a chain of fresh cooking restaurants. Here at the Greyfriars, we are delighted to introduce the talents of this promising young chef on July 7th. using only the finest ingredients, such as Hellmans mayonaise and crispy bacon, he does the basics, but very well.
